Jaipuri Khimar Curry

As salaamu alaykum

I was going through some old recipes and found this very exotic dish that I haven’t made in a long time. This is another recipe that is quick and Easy and can be done in less than half an hour. The saffron and cashews make this dish really special and should be served with piping hot roti’s or puri’s. Will make a tasty accessory to the rest of your Eid menu. Enjoy!

Jaipuri Khimar Curry






1 Kg Minced / finely cubed Mutton
2 medium onions sliced

2 tomatoes skinned and chopped

Some Condiments (Elachie, Cloves, Cinnamon Sticks, Peppercorns)
3 Tbsp. Amina’s Mutton Curry masala paste
1 tsp Amina’s Green Chilli Paste

1 tsp Amina’s Garlic Paste
1 Cup fresh buttermilk or Maas
A big pinch of Saffron (optional) soaked in lukewarm milk
½ Cup Cashew nuts
3 Tbsp. Ghee (clarified butter) / oil



Heat ghee in flat pot. Add in sliced onions and condiments and fry until light brown. Now add in green chillies, garlic and tomatoes and cook until soft.

Add Amina’s Mutton Curry Masala and simmer for 3 - 4 minutes.

Now add in Mince and cook for 10 – 12 minutes.

Add beaten buttermilk and a cup of water. Cook till meat is tender and gravy is thick.

Add soaked saffron and cashew nuts. Cover it with a lid for few minutes.

Serve hot garnished with chopped coriander leaves.
