With different themes/categories for each competition, followers send in attractive and unique pictures.
This month’s theme: vegetables. The theme was specifically chosen to encourage the use of our often forgotten friends- the vegetables. As we head towards a healthier lifestyle it is vital to incorporate all of the food groups into our diets.
The Holy Quran and Hadith provide many food suggestions, included in them are fruit and vegetables. Narrations of hadith include olives, dates, citron, pomegranate, thyme, coriander seeds, quince, barley,figs, grapes, melon, fenugreek, mushroom, to name a few. The path to wellness is made easier with the rememberance of Allah, by incorporating sunnat food into our daily meals.

The recipe below includes mushrooms, which are great source of dietary fibre, low in calories, fat-free, gluten-free, low in sodium and provide nutrients such as potassium, vitamin D, protein, vitamin C, iron and zinc. There are numerous ways to cook mushrooms and when cooked to perfection and with the right spices - they are decadently delicious! Mushrooms are also commonly incorporated into dishes such as pastas, chickens and casseroles. They can be used raw in salads or crumbed, deep fried, baked, sautéed, chopped up, sliced up and added to any meal as a side or main.
Barley and Mushrooms are super foods for their positive properties in helping to fight diseases and maintaining a healthy immune system. The Prophet (SAW) said that mushroom is a good cure for the eyes; it also serves as a form of birth control and arrests paralysis.
Our winning meal of survivor week will be announced in the monthly issue of Islam Today accompanied by the recipe and photographed meal.

4 portobello mushrooms. Trim the stalk. Using a knife, make a crisscross incision onto the stalk.
1tsp olive oil drizzled over each mushroom
Season with salt & pepper to taste
1tsp oregano sprinkled over each mushroom
And bake for 10mins @180
Add 1 Tbl passata inside each of the mushroom
Cherry tomatoes sliced
Sliced red chillies
Sliced black olives
Few leaves of basil
1 tsp olive oil drizzled over each mushroom
Roast in the oven for further 10mins @180C
